Lunch with crunch!

Ingredients:
⅓ cup preferred vegetable oil
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon lime juice
1 tablespoon honey
1 tablespoon toasted sesame seeds
2 teaspoons toasted sesame oil
1” fresh ginger, peeled and minced or grated
1 garlic clove, minced or grated
¼ teaspoon black pepperFor Salad:
4 cups finely shredded Napa cabbage
1 large carrot, cut into matchsticks
½ red bell pepper, seeded and very thinly sliced
1 cup sugar snap peas, thinly sliced on the diagonal
½ cup very finely shredded red cabbage
4 green onions, thinly sliced
10 KoyoⓇ Black Sesame Tamari Rice CrackersDirections:
- In a jar with a tight-fitting lid combine oil, soy sauce, vinegar, lime juice, honey, sesame seeds, sesame oil, ginger, garlic, and pepper. Shake vigorously to combine.
- In a large bowl toss together Napa cabbage, carrot, pepper, peas, red cabbage, and green onion. Add dressing to taste and toss to coat vegetables.
- Divide salad between bowls and scatter crackers on top.
